Apple Spring Rolls Recipe

Filipinos are known for our lumpia but we love sweet and dessert spring rolls too.

Turon (or banana spring rolls) is a great example.

It’s a beloved Filipino snack made of bananas or plantains coated with granulated sugar or brown sugar, wrapped like a spring roll, then deep-fried.

Red and I are not big fans of deep-drying though so we tried baking turon one time and it worked out so well that’s how we make it all the time now.

These apple spring rolls are a delightfully delicious twist on turon. Made with the season’s best apples and baked instead of fried, it’s a healthier snack alternative and made with an ingredient we all love.

I’ll show you how to achieve that nice crispy and crunchy texture without all that oil. They’re so good too!

We love turon but when we want to mix things up and especially in the fall when apples are especially abundant, we make a batch of apple turon. They’re great because:

  • Baked not fried. We get the same crunch spring rolls are known for without having to deep fry.
  • Easy to make. These are incredibly easy to make with its no-fuss cinnamon apple filling.
  • Freezer-friendly. You can easily make them ahead. Make a batch today, freeze them, then bake when the craving hits.
  • Dress them up! Serving them to company? It’s so easy to jazz them up. Drizzle with caramel sauce or dip in chocolate, sprinkle with powdered sugar or chopped nuts, the possibilities are endless.

What you’ll need

You’ll only need 6 ingredients to make this recipe, the most important ones:

  • Apples — I usually use golden delicious apples but you can use any kind of apple you like. Just make sure they’re sweet and don’t get too soft when cooked.

I get asked if apple pie filling can be used instead of fresh apples in this recipe and yes, it can. Just make sure not to overfill and to wrap the spring roll tightly. More wrapping tips below.

Preheat oven to 425F and line a baking sheet with parchment paper. Place an oven-safe wire rack on top of the parchment paper then set aside.

Toss apples in sugar and ground cinnamon. Let sit for 10 minutes to allow the flavors to combine.

Wrap then place the spring rolls on your prepared baking sheet.Brush with melted butter and bake for 10-15 minutes or until golden brown.

Then carefully turn each turon over, brush with more butter and continue baking for another 10-15 minutes until nice and golden.

You can serve the turon immediately.

Optionally, you can drizzle them withsalted caramel sauceand sprinkle with chopped almonds before serving.

How to wrap spring rolls

Properly wrapping turon (or any kind spring roll) is important because you don’t want the filling bursting out during cooking.

Don’t worry, it’s easy! Just make sure to wrap it tightly and try to make equal-sized pieces so they cook evenly.

Put a spring roll wrapper on a flat surface and place 5-6 pieces of apples near the bottom. Fold the bottom corner once. Fold it again.

Take one side and fold it into the middle of your turon. Make sure to wrap the apples snuggly. Take the other side and fold again.

Fold the roll upwards again and dab some cornstarch water on the remaining wrapper on top. This helps seal the roll. Fold one last time.

How to make apple spring rolls crispy in the oven

We’ve found that there are three key things to making baked apple spring rolls crispy in the oven:

  1. Brush the whole spring roll with melted butter. Get into every nook and cranny.
  2. Place the spring roll on an oven-safe wire rack which you then place on a baking sheet lined with parchment paper. This is necessary because if you just place the turon directly on the baking sheet, the bottom will become very soggy.
  3. Turn theapple turon halfway during baking so that the bottom gets the chance to turn golden brown too (and remember,brush with butter!)

What’s the best kind apples to use for spring rolls?

I default to granny smith apples when baking because I love how their tartness gives a nice contrast to sweet desserts and how they keep their structure during baking.

For apple spring rolls though, I tend to choose golden delicious apples because I want something a little sweeter but still crispy. I don’t want the apple filling to fall apart while baking.

What kind of spring roll wrappers do I use?

You can usually find spring roll wrappers in Asian stores or at the international aisle/frozen section of your local supermarket.

Don’t buy the rice paper kind. You needthe ones that can also be used for wontons.

How long do apple spring rolls last?

To keep them crunchy and crispy, best to keep spring rolls uncovered on your counter. They should be good up to 2 days.

They will last longer in the fridge but once covered or chilled, they will lose their crunch. However, it’s easy to get the crunch back (see below).

How do I reheat leftovers?

The best way to reheat leftovers is by placing them in your oven toaster for a few minutes until they are heated through.

Microwaving them is not a great option because they will end up chewy and mushy.

Can I freeze apple turon?

Apple turon freezes very well.

You can make a batch, roll them, and place them in a freezer-safe container. Ensure that your container is air-tight so that they don’t get freezer-burn.

You can bake them straight from the freezer, no need to thaw. However, your baking time will be slightly longer.
