The sun is out and summer is here. With kids at home, one of our favourite activities to tick off our summer bucket list is making our own popsicles. Kids love cooking, especially easy recipes that taste ever so yummy. These delicious popsicles are made with 100% fruit and by spending a little time layering and freezing you can create bright rainbow ice lollies that are healthy too. So grab an apron get the kids in the kitchen, raid the fruit bowl, and get cooking.

Easy Popsicles to Make with Kids

Popsicles can be complicated or easy and when we are cooking with kids especially young children the easier they are to make the better. Although taking a little time these couldn’t be any easier, just 3 ingredients and you are on your way.

Growing up my mum always had a set of ice lollies in the freezer over the summer. I think she must have picked the mould up at a Tupperware party. I inherited that mould and have used it with my kids and over the summer you’ll find it set up in the bottom drawer of our freezer filled with simple lollies and popsicles that they can have to cool down.

Unfortunately this year after over 40 summers of use they started to deteriorate so I’ve just got a new set (this one) that stands up easy in the freezer and if the kids knock it doesn’t end up falling apart. Whilst buying that one I also treated us to some reusable silicone popsicle molds like Callipso type ones perfect for filling with fruit juices for an even easier summer treat the kids can make themselves.

Making Kiwi Rainbow Ice Pops with kids

WARNING – this did get messy!

Peeling and chopping the kiwi. As the kiwi is soft we find it really easy to chop with our normal kitchen knife if you want it can be a good idea to do the peeling ahead of time to help younger children with the recipe.

We use a non-slip mat below the chopping board or bowls when we cook with the kids – this prevents it slipping all over the place and for little ones that have yet to get to grips with using both hands provides that extra hand to use.

The actual cooking time for this recipe is really small, it was waiting for the layers to freeze that took the longest. But putting the layers in and freezing and then removing is worth it. It looks so good when you remove from the mold that the kids just want to eat the rainbow.

So quick and easy to make this rainbow on a stick with marshmallow cloud snack is perfect for little hands to do as well!

Kiwi Rainbow Ice Pops

A delicious and easy healthy ice lolly recipe to cook with and for kids. With kiwi, raspberry and mango these are full of goodness and the kids will love how tasty they are.

Equipment

  • Ice Lolly Mold and Sticks if needed

Ingredients

  • 2 Kiwi’s
  • 100 g Raspberries
  • 500 ml Orange and Mango Juice

Instructions

  • Peel the kiwi

  • Using a potato masher mash them to a pulp

  • Fill up in an ice pop mold to one third full with the pulp and add a ice pop stick

  • Place in freezer

  • Smash the raspberries to a pulp

  • When the kiwi is frozen add the raspberries to around 2/3 full

  • Return to the freezer

  • With the raspberries frozen top up the molds with the orange and mango juice and freeze.
