When we got this months recipe swap, things changed up a bit, first of all, we went to a new cookbook for this new year, and our first challenge would be a cookie. Our new cookbook The Second Ford Treasury of Favorite Recipes from Favorite Eating Places, is the second book in the series and was first published in 1954….hmm my first thoughts were that cookbook really isn’t very old…. sigh, especially with I was born in 1953.

Our first recipe redo would be a classic cookie, the one and only Tollhouse cookie from its birthplace, the Toll House Inn in WhitmanMassachusetts. Sadly the Toll House Restaurant is no more, having burned down in 1984, while there is a plaque on the original site, there is now also a Wendy’s and a Walgreen’s, what a sadtestamentto progress.

The rules of the swap are pretty simple, change at least three things about the original recipe and redo it as a more contemporary recipe. I thought about the toll house cookie in all its delicious glory and tried to remember the first time I had one, and you know I couldn’t remember! But what I did remember were the oatmeal cookies that my mother made for me while I was growing up, I remember how much I loved the raw batter and how I could eat a whole bowl without even bothering to bake them….sigh, I also remember that my mother would only let me devour raw cookie batter if it was made with butter, not theCriscothat sometimes took its place.

So when it came time to redo this classic, I had to go with a classic of my own, My mother’s oatmeal cookies. I wanted these cookies to have a little more substance to them, and honestly, raisins just didn’t seem to be enough. I had bought a bag of trail mix on a whim and decided that it would make a great addition to my favorite cookie.

Ingredients

  • 1 cup butter
  • 1 cup sugar
  • 1 ¼ cups firmly packed dark brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla
  • 1 ⅔ cups flour
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 3 cups old fashioned oats
  • 2 cups trail mix use your favorite blend
  • 1 Cup Walnuts finely chopped in food processor*

Instructions

  • Preheat oven to 350°.

  • In the bowl of your mixer cream together butter and sugars until well blended.

  • Add in the eggs, and vanilla and continue to whip until almost fluffy.

  • In another bowl stir together flour, very finely chopped (should almost resemble powder) nuts, cinnamon, baking soda, baking powder, and salt.

  • Slowly add your powdered ingredients to your creamed ingredients while mixing.

  • Mix well.

  • Now stir in the oats and trail mix.

  • Drop by scoop or teaspoon onto hot stone or slightly greased cookie sheet.

  • Bake for 11-14 minutes depending on cookie size.

  • Remove cookies from baking sheet or stone right away and transfer to cooling racks.

Notes

*use the nuts of your choice just make sure to almost make them the consistency of flour by using your food processor.

    I think you should check this recipe. After reading the one comment about them not working, I only put one tray in to start and they had no structure. I knew that flour was missing so I added more and they worked and looked just like your pictures. The amount of flour should be about 2 cup plus 2 tbsp.

    I sub egg for just egg and butter for vegan plant based…finished with a touch of course sea salt. ..also used sugar alternative for white sugar…zero lactose and crazy good

    I love this recipe Dennis as I have been looking for a recipe with granola. I will see how they come out and how tasty. I didn’t add alot of sugar so hope they come out delish. I LOVE to bake alot and cook. My nickname is cookie.
