Pina Colada Fruit Dip is the perfect addition to your summer fruit platter. Doesn’t pineapple and coconut make the best couple?! You simply give all the ingredients a whirl in your electric mixer, and you’re ready to dig in within 5 minutes or less. Just to make the dip a little prettier, I added a couple tablespoons of toasted coconut on top. Yummy!

I’ve had it in my head from the second I started putting together this simple and delicious Pina Colada Fruit Dip. Can you see me dancing and singing in my kitchen as the mixer was working its magic? I bet you’re so jealous you didn’t get to witness it with your own eyes. Hahahaha.

I put this Pina Colada Fruit Dip together to share with my girlfriends, Kristen and Melanie. Kristen offered to host us at her place so we could catch up and spend some time with her daughter Haylie and little Baby Parker. I’ve talked about these ladies plenty of times before on the blog. You can see the Elephant themed baby shower Melanie and I threw for Kristen, here and get the recipe for my yummy Pineapple Paradise Mimosas that they helped inspire, here! Love those girls!

But getting back to my Pina Colada Fruit Dip…It’s delicious, folks! It’s so good, you could probably eat it by the spoonful if you wanted to. I personally wanted to take a bath in it! That might sound extreme but this is because I’m on day 16 of the 21 Day Fix and even my arm sounds appetizing at the moment. You can read more about my diet, here. It’s been hard work but I’m wanting that bathing suit ready body for my adult-only trip to the Bahamas this weekend! Will Power!

Although I couldn’t eat any of this Pina Colada Fruit Dip today, I’ve had it a trillion times before and loved it every time. Kristen and Melanie loved it too! They had no problems being my guinea pigs and trying this one before it hit the Internet. They both gave their stamps of approval so you know it’s a winner.

So what do I need to make this Pina Colada Fruit Dip?

8 oz. can of crushed pineapple (use the fruit and juice), 3.5 oz. French vanilla instant pudding, ¾ cup milk (I used skim milk), ½ cup sour cream (I used the light version), ½ tsp coconut extract, 2 tablespoons toasted coconut (optional for garnish)

Pina Colada Fruit Dip | Simple and Easy Fruit Dip Recipe (2)Combine everything except the toasted coconut in a bowl of an electric mixer and stir until thickened, about 2 – 3 minutes.

Transfer to a serving dish and place in the refrigerator until ready to serve. This Pina Colada fruit dip keeps well and can be made the night before.

To add a little bit of fanciness to your dip, add some toasted coconut to the top of it as garnish.

Simply place a non-stick skillet on the stovetop over medium heat. Sprinkle in about two tablespoons of coconut flakes into the dry skillet. There’s no need for cooking spray, oil, etc.
