The cookies scoop and bake just like regular sugar filled cookies, and no one here has been able to tell that they’re sugar free. But I think my refusal to share, andcalling them “diet food” is starting to tip them off that these are REALLY good.

Lookie there! And it TASTES just like a real cookie too! They don’t have the crunch or crisp factor. Think soft cookie. They really reminded my husband of moist banana bread. (A hint of that banana flavor came through for us the first day…not so much the second.)

These delicious cookies are a healthy slow carb dessert, snack, or even a fantastic breakfast cookie! And they're gluten free, sugar free, and THM friendly as an E.

Ingredients

  • 1 banana, mashed
  • 1 egg
  • 2 tablespoons apple sauce
  • ¾ cup Sweet Brown Sugar substitute
  • ¼ cup THM Gentle Sweet* OR 2 tablespoons THM Super Sweet Blend
  • ¼ cup 0% Greek yogurt
  • 1 teaspoon vanilla
  • 1½ cups THM Baking Blend**
  • 1 teaspoon baking powder
  • 1 teaspoonbaking soda
  • ½ teaspoon cinnamon
  • ½ teaspoon salt
  • 1 ¾ cups old fashioned oats
  • 1 cup dried apple pieces

Instructions

  1. Preheat oven to 350 degrees, and line 2 baking sheets with parchment paper.
  2. In a mixing bowl, mash banana. Add egg, applesauce, brown sugar sub,
  3. THM Sweet Blend, Greek yogurt, and vanilla. Whisk to combine.
  4. Add THM Baking Blend, baking powder, baking soda, cinnamon, and salt into the bowl, and stir until just combined.
  5. Fold in the oats and apple pieces.
  6. Drop by tablespoons onto the baking sheet- I flatten mine down a little.
  7. Allow cookies to sit for a few minutes for the dough to thicken up- this will prevent them from spreading thin when baking.
  8. Bake for 12 minutes until cookies are slightly golden brown.
  9. Let the cookies cool on the baking sheets for 5 minutes, then transfer to wire
  10. racks to cool.
  11. Store in the fridge in a sealed container. I enjoy one or two as a dessert or snack with an additional protein source.

Notes

*or 2 tablespoons xylitol or erythritol + ⅛ teaspoon THM stevia extract
**if you don't have baking blend, you can try subbing 1½ cups of oat flour, or 1⅓ cup oat fiber, 1½ tablespoon coconut flour, 1 tablespoon almond flour, ⅛ teaspoon glucomannan, ⅛ teaspoon collagen.
Use oat flour to make this a nut and coconut free recipe!
